Der sehr intensive rubinrote Wein ist ein Cuveé von 3 Weinbergen des Golan.

Eines davon ist bereits mehr als 25 Jahre alt, die anderen mehr als 10 Jahre alt. Die Erde besteht aus einer Mischung von kiesbedeckter Tonerde, von 2 Seiten geschützt und mit ca. 3500 Stöcken pro Hektar bepflanzt. Der Wein wurde im rostfreiem Edelstahltank bei 32°C vergoren, bis der Zucker gänzlich umgewandelt wurde, und dann für eine weitere Woche mit der Schale unter Rühren belassen.

Nach dem Ruhen des Weines wurde ein Teil in 4000 Liter fassende alte europäische Eichenfässer umgefüllt, um darin 18 Monate zu altern.

Der Rest wurde in neue französische und amerikanische Eichenfässer für ca. 6 Monate umgefüllt.

Tasting notes: Brilliant ruby hue, with traces of purple tint. The nose is dominated by deep oak resins, those not at all sweet but rather elegantly spicy. As the minutes pass, a far greater complexity of intense black fruit is revealed, with hints of black cherries, blueberries and blackcurrants as well as a touch of cloves, cigar box and a refreshing streak of eucalyptus. As the wine opens, the oaky layers recede, allowing the abundant fruit to take center stage. After four hours from opening, an enchanting floral note appears, together with a hint of strawberry. The palate is redolent with intense, rich fruit, yet the main impression left is one of elegant, complex refinement. The wine is solidly structured yet amazingly soft-textured, with no rough edges. Its savory, appetizing tannins and acidity frame the rich, ripe fruit and avoids banal sweetness. The finish is long, with black fruits resonating with sweet spices and bittersweet chocolate.

Food pairing: Full-flavoured beef, veal and chicken or rich cheeses.
